Ingredients
  

Dry Ingredients

  • 3 cups gluten-free flour Use a blend made for baking, ideally with xanthan gum.
  • 1 tsp salt
  • 2 tsp instant yeast
  • 2 Tbsp sugar Can add a tablespoon of honey for sweetness.

Wet Ingredients

  • 2 eggs eggs (at room temperature)
  • ¼ cup unsalted butter (softened) Melted butter for brushing prior to serving.
  • 1 ¼ cup milk (at room temperature) Can be substituted with a non-dairy alternative.
  • 1 tsp apple cider vinegar (or lemon juice)

Preparation

  • In the mixing bowl of your electric mixer, combine gluten-free flour, instant yeast, sugar, and salt.
  • Warm the milk to 45°C (115°F).
  • Pour the warm milk, softened butter, eggs, and apple cider vinegar into the bowl and mix until fully combined.
  • Grease a 9×13 inch baking pan or two 9-inch square/round pans.
  • Using an ice cream scoop, place dough balls into the pans.
  • Smooth out the tops of the dough and cover with a kitchen towel. Let it rise in a warm spot for 1 hour.

Baking

  • Preheat the oven to 350°F (177°C).
  • After an hour, bake for 25 to 30 minutes until the tops are golden brown.
  • Melt 2 tablespoons of butter and brush it over the tops before serving.

Notes

Store in an airtight container in the fridge for 3-4 days or freeze for 2-3 months. Reheat in the oven for fresh taste. For variations, add fresh herbs or garlic to the dough.
