  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup coconut oil or vegan butter
  • 3 tablespoons sugar
  • 1/2 cup almond milk or any dairy-free milk
  • 1 tablespoon vanilla extract

Filling Ingredients

  • 1 tablespoon cinnamon
  • 1/4 cup sugar (for the filling)

Glaze Ingredients

  • 1 cup powdered sugar
  • 2-3 tablespoons almond milk (for the glaze)

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix gluten-free flour, baking powder, and salt.
  • Add coconut oil and sugar, then mix well.
  • Gradually stir in almond milk and vanilla extract until a dough forms.
  • Roll the dough into a rectangle on a floured surface.
  • Sprinkle cinnamon and sugar mixture over the dough.
  • Roll tightly into a log and cut into pieces.
  • Place the rolls on a baking sheet and bake for 20-25 minutes until golden.

Glaze Preparation

  • For the glaze, mix powdered sugar with almond milk until smooth.
  • Drizzle the glaze over the warm rolls and serve.

Notes

For best results, knead the dough well and keep surfaces floured to prevent sticking. Store rolls in the refrigerator for 3-4 days or freeze for up to 3 months.
