Instructions
 

Preparation

  • In a large bowl, mash the chickpeas with a fork, leaving some chunks for texture.
  • Add in the grated carrots, bell peppers, minced garlic, parsley, cumin, salt, black pepper, oat flour, spinach, smoked paprika, and lemon zest. Mix well until everything is combined.
  • Form the mixture into patties, about the size of your palm.

Cooking

  • Heat the olive oil in a skillet over medium heat.
  • Fry the patties for 3-4 minutes on each side, until they’re golden brown.

Notes

These patties keep well in the fridge for up to 4 days. For longer storage, freeze them for up to 3 months. Reheat in a skillet for crispy texture.
