  • 2 cups gluten-free flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup milk (or dairy-free alternative)
  • 1/4 cup butter (or dairy-free alternative)
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 tsp dried thyme
  • 1/2 tsp black pepper

Preparation

  • In a large pot, heat the butter over medium heat. Add the onion, carrots, and celery; cook until softened.
  • Add the diced chicken and cook until browned. Pour in the chicken broth and bring to a boil.
  • In a mixing bowl, combine gluten-free flour, baking powder, and salt. Stir in the milk to form a thick dough.
  • Drop spoonfuls of the dough into the boiling broth.
  • Reduce heat and let it simmer for 15-20 minutes until the dumplings are fluffy and cooked through.
  • Stir in thyme and black pepper before serving.

Notes

Serve in a rustic bowl with chopped fresh parsley on top. Great with crispy bread for non-gluten-free diners. Refrigerates well for 3-4 days.
