Wet Ingredients

  • 1/4 cup granulated sugar

  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the gluten-free flour, baking soda, salt, cinnamon, cardamom, ginger, and cloves.
  • In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes until the edges are lightly golden.
  • Allow to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

Letting the cookies cool on the sheet helps maintain their soft texture. Experiment with different spices and sugars for unique flavors.
