For the Dough:

  • 3 ½ cups 450g all-purpose flour
  • 1 packet 7g instant yeast
  • ¼ cup 50g granulated sugar
  • 1 teaspoon salt
  • ¾ cup 180ml warm milk
  • 1 large egg
  • ¼ cup 60g unsalted butter, softened

For the Butter Layer:

  • ¾ cup 170g unsalted butter, cold
  • 2 tablespoons flour

For the Egg Wash:

  • 1 egg yolk
  • 1 tablespoon milk

Instructions
 

  • Prepare the DoughIn a mixing bowl, combine flour, yeast, sugar, and salt. Add warm milk, egg, and softened butter. Knead until a smooth dough forms. Cover and let it rest for 1 hour until doubled in size.
  • Prepare the Butter LayerFlatten the cold butter between two sheets of parchment paper and sprinkle with flour. Roll it into a thin rectangle, then refrigerate for 15 minutes.
  • Roll and Fold the DoughRoll out the dough into a large rectangle. Place the butter layer in the center and fold the dough over it. Roll it out again and fold it into thirds. Repeat this rolling and folding process two more times, chilling the dough for 30 minutes between each fold.
  • Shape the GipfeliRoll out the dough into a large sheet and cut it into triangles. Roll each triangle tightly from the base to the tip to form croissant shapes. Place them on a baking sheet, cover, and let them rise for 30 minutes.
  • Apply the Egg WashIn a small bowl, whisk together egg yolk and milk. Brush the mixture over the Gipfeli for a golden, glossy finish.
  • Bake to PerfectionPreheat the oven to 375°F (190°C). Bake the Gipfeli for 15-18 minutes until golden brown. Let them cool slightly before serving.
