Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

Wet Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

  • 2 cups peeled and chopped apples a tart variety works best!

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, baking powder, ginger, nutmeg, cinnamon, and salt.
  • In another large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes).
  • Beat in the egg and vanilla extract until combined.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Fold in the chopped apples gently so they don’t get mushy.

Baking

  • Drop spoonfuls of dough onto the prepared baking sheet, leaving space for them to spread.
  • Bake for 12-15 minutes until the edges are golden and the centers are set.
  • Let them cool on a wire rack before diving in!

Notes

Store cookies in an airtight container for up to one week; they can be frozen for up to three months. For extra-chewy cookies, chill the dough for about 30 minutes before baking. Consider pairing with spiced cider, tea, or vanilla ice cream.
