  • 2 pounds baby potatoes Choose small waxy potatoes for best results.
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced Toasting the garlic enhances flavor.
  • 1/2 cup grated Parmesan cheese Feel free to double or substitute with cheddar.
  • Salt and pepper to taste Adjust according to preference.
  • Fresh parsley for garnish (optional) Adds color and freshness.

Preparation

  • Preheat the oven to 425°F (220°C).
  • Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  • Drain and let them cool slightly.

Cooking

  • On a baking sheet, arrange the potatoes and gently crush each one with a fork or potato masher.
  • Drizzle olive oil and sprinkle minced garlic, salt, and pepper over the top.
  • Bake for 20-25 minutes or until crispy and golden.
  • Once out of the oven, sprinkle Parmesan cheese over the potatoes and return to the oven for an additional 5 minutes.
  • Garnish with fresh parsley if desired and serve hot.

Notes

Store leftover smashed potatoes in the fridge for up to 3 days, or freeze for about two months. Reheat in the oven or skillet until crispy.
