  • 1 cup heavy cream Substitute with milk or plant-based alternative for a lighter option.
  • 1/2 cup chopped green onions For garnish.
  • 1 tbsp olive oil To cook the potatoes.

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the leftover garlic mashed potatoes and broth, stirring until well combined.
  • Bring the mixture to a simmer and cook for about 5 minutes.
  • Stir in the heavy cream and season with salt and pepper.
  • Cook for an additional 2-3 minutes.
  • Serve hot, garnished with chopped green onions and shredded cheese if desired.

Notes

This soup can be stored in the fridge for up to 3 days, or frozen for about two months. Reheat on the stovetop or microwave, adding a splash of broth if too thick. Experiment with different herbs for added flavor.
