Ingredients
  

Pasta and main ingredients

  • 400 g spaghetti Use your favorite type of spaghetti.
  • 250 g Italian sausage Can substitute with ground turkey or plant-based sausage.
  • 3 cups fresh spinach Feel free to add other vegetables.

Flavorings and fats

  • 4 cloves garlic, minced Toasting the garlic is key for flavor.
  • 4 tablespoons butter For a richer flavor.
  • 1 tablespoon olive oil Used for browning the sausage.

Cheese toppings

  • 1 cup shredded mozzarella cheese Adds creaminess.
  • 1/3 cup grated Parmesan cheese For a salty kick.

Seasonings

  • to taste Black pepper Add freshly ground for best flavor.

Instructions
 

Cook Spaghetti

  • Bring a large pot of salted water to a boil.
  • Cook spaghetti until al dente, then drain and set aside.

Cook Sausage

  • In a large skillet, heat olive oil over medium heat.
  • Add sausage, crumble it as it cooks, and sauté until browned.
  • Remove and set aside.

Add Aromatics and Spinach

  • In the same skillet, add butter and minced garlic.
  • Cook for 1 minute until fragrant.
  • Add spinach and sauté until wilted.

Combine Mixture

  • Return cooked sausage to the skillet.
  • Add drained spaghetti and toss everything together to coat the noodles in garlic butter.

Finish and Serve

  • Sprinkle mozzarella and Parmesan on top.
  • Cover skillet with a lid and let cheese melt for 2-3 minutes.
  • Season with salt and pepper to taste, toss again gently, and serve hot.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge. Freezes well for about a month. Reheat gently in a skillet, adding a splash of water or broth to revive.
