Ingredients
  

For the Bites

  • 2 cups cooked macaroni
  • 2 cups shredded sharp cheddar cheese Feel free to add more cheese for extra flavor.
  • 1 cup breadcrumbs Panko breadcrumbs can be used for extra crunch.
  • 1/2 cup all-purpose flour
  • 2 large eggs Beaten for the breading station.
  • to taste Salt and pepper
  • as needed Oil for frying Vegetable oil or canola oil works well.

Preparation

  • In a bowl, combine cooked macaroni, shredded cheddar cheese, salt, and pepper. Mix well.
  • Allow the mixture to cool slightly, then form into small balls or bites (about the size of a golf ball).
  • Set up a breading station with three dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
  • Roll each macaroni ball in flour, dip it in the beaten egg, and then coat it with breadcrumbs.
  • In a deep pan, heat oil over medium heat.

Cooking

  • Fry the bites in batches until they turn golden brown and crispy.
  • Drain on paper towels and serve warm.

Notes

You can prepare the mixture ahead of time and keep it in the fridge until you're ready to fry. Fry in small batches to avoid sogginess. For baking, brush lightly with oil and bake at 400°F until crispy.
