  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter, softened
  • 1 cup milk Room temperature is preferred.
  • 3.5 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 3 large eggs Room temperature is preferred.

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the creamed mixture, alternating with the milk, mixing until just combined.
  • Divide the batter evenly between the prepared cake pans.

Baking

  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Frost with your favorite vanilla frosting and enjoy!

Notes

For extra fluffiness, ensure all ingredients are at room temperature. Don’t overmix once you add the flour. Store covered at room temperature for 2-3 days or in the fridge for about a week.
