Ingredients
  

Main Ingredients

  • 2 cups almond flour
  • 2 whole oranges Use fresh oranges for the best flavor.
  • cup honey Divided into two parts for mixing and glazing.
  • 3 large eggs Large eggs are recommended for moisture.
  • ½ teaspoon baking soda Essential for a fluffy texture.
  • 1 cup ground pistachios Ground finely.
  • 1 teaspoon vanilla extract
  • ½ cup fresh orange juice Freshly squeezed for the best flavor.

Instructions
 

Preparation

  • Rinse the oranges and toss them in a pot. Cover with water and let them simmer gently for one hour.
  • Drain the water and pop the oranges into a blender. Blend until you achieve a velvety smooth texture.
  • Preheat your oven to 350°F (175°C). Lightly grease a 9-inch springform pan to prevent sticking.

Mixing and Baking

  • In a large mixing bowl, combine the blended oranges, honey, eggs, almond flour, ground pistachios, baking soda, and vanilla extract. Stir until smooth.
  • Pour the mixture into the greased pan and bake for around one hour. Keep an eye on it; if it browns too quickly, loosely cover it with foil.

Creating the Glaze

  • In a small pot, combine the remaining honey and orange juice. Heat until it boils, then simmer until it reduces to half. Let it cool.
  • Once the cake isn’t too hot, brush the glaze over the top. Allow it to cool completely before removing it from the pan.

Notes

Serve with whipped cream or vanilla ice cream for an added treat. Store in the fridge for up to 5 days and freeze for up to three months.
