Ingredients
  

Dry Ingredients

  • 2 cups 1:1 gluten-free flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 cup unsweetened cocoa or cacao powder

Wet Ingredients

  • 2 cups sugar
  • 1 cup oil
  • 2 pieces eggs Use room temperature for smoother batter.
  • 1 tsp vanilla
  • 1 cup milk Let come to room temperature.
  • 1 cup coffee Enhances chocolate flavor.

Preparation

  • Preheat your oven to 325°F and generously spray two round cake pans with non-stick spray.
  • In a bowl, whisk together the gluten-free flour, salt, baking powder, baking soda, and cocoa powder until combined.
  • In another large bowl, mix together the sugar, oil, eggs, and vanilla until smooth and creamy.
  • Add the dry ingredients to the wet mixture, careful not to over-mix.
  • Stir in the milk and coffee until just combined.

Baking

  • Pour the batter evenly into the prepared pans and bake for about 50 minutes or until a toothpick comes out relatively clean.
  • Let it cool completely before removing from pans.

Notes

For a twist, add orange zest or crushed peppermint candies. Can substitute eggs with applesauce for a vegan version.
