  • 8 ounces mushrooms, sliced
  • 2 tablespoons olive oil or butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1/4 cup heavy cream or coconut milk (for vegan option) Use coconut milk for a vegan option.
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons cornstarch (optional for thickening) Optional, mix with water if thickening.
  • Salt and pepper to taste

Cooking Instructions

  • Heat the olive oil or butter in a skillet over medium heat.
  • Add the diced onion and garlic, and sauté until softened, about 3-4 minutes.
  • Stir in the sliced mushrooms and cook until tender, about 5 minutes.
  • Pour in the vegetable broth and bring to a simmer.
  • Add soy sauce and, if desired, cornstarch mixed with a little water to thicken.
  • Stir in the heavy cream or coconut milk and season with salt and pepper.
  • Let it simmer for another 5 minutes until thickened.
  • Serve over mashed potatoes, roasted vegetables, meat, or biscuits.

Notes

For deeper flavor, sauté mushrooms until golden brown. Adjust thickness of gravy as preferred.
