  • 1 cup breadcrumbs
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix together the mayonnaise, garlic powder, onion powder, salt, and pepper.
  • In another bowl, combine the grated Parmesan cheese and breadcrumbs.
  • Coat each chicken breast with the mayonnaise mixture, then press it into the Parmesan-breadcrumb mixture to coat evenly.
  • Place the coated chicken breasts on a baking sheet lined with parchment paper.
  • Bake for about 25-30 minutes, or until the chicken is cooked through and the crust is golden brown.
  • Garnish with fresh parsley if desired, and serve warm.

Notes

For added flavor, marinate the chicken in the mayo mixture for an hour. You can substitute regular breadcrumbs with panko for extra crunch. For a spicy version, add cayenne pepper to the breadcrumb mixture. Vegan option: Substitute chicken with eggplant slices and use vegan mayonnaise.
