Main Ingredients

  • 6 medium medium potatoes, peeled and diced
  • 1 medium medium onion, diced
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth Homemade broth can enhance flavor.
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, freshly grated Freshly grated for better melting.
  • Salt and pepper, to taste
  • 8 slices bacon, cooked and crumbled
  • Extra shredded cheddar cheese For topping.
  • 4 green onions, finely chopped For garnish.
  • Black pepper or paprika, for garnish
  • Sour cream (optional) Optional garnish.

Instructions
 

Preparation

  • In a large pot, melt butter over medium heat.
  • Add diced onions and cook until translucent (about 5 minutes).
  • Stir in flour and cook for 1-2 minutes to make a roux.

Cooking

  • Gradually add chicken broth, stirring constantly to prevent lumps.
  • Add diced potatoes and bring to a simmer. Cook until the potatoes are tender (15-20 minutes).
  • Reduce heat to low. Add milk and cream, stirring to combine.
  • Gradually stir in grated cheese until melted and smooth.
  • Season with salt and pepper to taste.

Serving

  • Ladle into bowls and top with crumbled bacon, extra cheese, green onions, and a sprinkle of pepper or paprika.

Notes

For a thicker soup, blend a portion after adding cream and cheese, then return to pot. For a vegetarian version, use vegetable broth and omit bacon.
