  • 1 cups unsalted butter (softened)
  • 1 cups light brown sugar (packed)
  • 0.5 cups granulated sugar
  • 2 large eggs (room temperature) Using room temperature eggs helps with blending.
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoons salt
  • 2 teaspoons vanilla extract

Instructions
 

Toast Pecans

  • Toast the chopped pecans in a skillet over medium heat for about 5 minutes, stirring often. Watch closely to prevent burning.

Make Dough

  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar. Beat in the eggs and vanilla extract. Gradually add in the flour, baking soda, and salt until well combined. Fold in the toasted pecans.

Bake

  • Preheat the oven to 350°F (180°C). Scoop dough onto a baking sheet and bake for 10-12 minutes or until the edges are golden. Let them cool on a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. Dough can be refrigerated for up to three days or frozen.
