  • 8 pieces Chicken thighs (Bone-in, skin-on)
  • 2 tablespoons Olive oil

Seasonings

  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Dried thyme
  • 1/2 teaspoon Dried rosemary
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Smoked paprika (optional) Use if desired for extra flavor

Instructions
 

Preparation

  • Pat the chicken thighs dry.
  • Drizzle olive oil over each thigh and rub it in to coat the skin.
  • In a bowl, mix garlic powder, onion powder, paprika, thyme, rosemary, salt, pepper, and smoked paprika. Sprinkle this mix over the thighs and press it in gently.

Baking

  • Place the seasoned thighs skin-side up on a baking sheet lined with parchment paper.
  • Preheat the oven to 425°F.
  • Bake for 35-40 minutes until the internal temperature reaches 165°F.

Resting

  • Let the chicken rest for 5 minutes before serving.

Notes

Use a meat thermometer for optimal cooking. You can swap out herbs for what you have on hand or coat chicken with flour for extra crispiness.
