  • 2 cups cooked rice Use day-old rice for the best texture.
  • 2 pieces eggs Scrambled and set aside.
  • 1 cup mixed vegetables (peas, carrots, etc.) Feel free to use your favorite vegetables.
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil For frying.
  • 1 piece green onion, chopped For garnish and flavor.

Cooking Steps

  • Heat the vegetable oil in a large skillet over medium heat.
  • Scramble the eggs in the skillet until fully cooked, then remove and set aside.
  • In the same skillet, add the mixed vegetables and stir-fry for about 2 minutes.
  • Add the cooked rice to the skillet and stir-fry for another 3-4 minutes, breaking up any clumps.
  • Pour in the soy sauce and mix well.
  • Stir in the scrambled eggs and green onion, cooking for an additional minute before serving.

Notes

For best results, use day-old rice. This fried rice can be varied by adding sesame oil, tofu, lime juice, or cilantro. It freezes well for up to a month.
