  • 1 large English cucumber or 2 Persian cucumbers, thinly sliced
  • 1 pint cherry or grape tomatoes, halved
  • 8 oz mozzarella pearls (or cubed fresh mozzarella)
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh basil leaves, torn or chopped

Dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze (or reduction)
  • Salt and freshly ground black pepper, to taste
  • Optional: crushed red pepper flakes for a little kick

Instructions
 

Preparation

  • Slice the cucumbers, halve the tomatoes, and thinly slice the red onion.
  • In a large bowl, combine the sliced cucumber, halved tomatoes, mozzarella, onion, and basil.
  • Drizzle everything with olive oil and balsamic glaze. Season with salt, pepper, and optional red pepper flakes for heat.
  • Toss gently until all the ingredients are coated in the dressing.
  • Serve immediately, or chill in the fridge for 15-30 minutes to meld the flavors.

Notes

This salad can last in the fridge for 1-2 days. Add tomatoes and mozzarella before serving if making ahead to maintain crispiness. Use fresh ingredients for the best flavors!
