  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2.5 cups all-purpose flour Measure correctly to avoid dry cookies.
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt If using salted butter, skip this.
  • 0.25 teaspoon almond extract
  • to taste Sweet almond icing (for topping)

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Baking

  • Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Once cooled, drizzle with sweet almond icing on top, if desired.

Notes

Store in an airtight container at room temperature for about one week. To make ahead, freeze for up to three months and microwave for a few seconds to warm before serving. Chilling the dough for 30 minutes helps to create thicker cookies.
