  • 4 large large potatoes, peeled and diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth

Cream and seasonings

  • 1 cup heavy cream Optional for a creamier texture
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme

Optional toppings

  • 1 cup shredded cheese Optional

Instructions
 

Preparation

  • In a crockpot, combine the diced potatoes, onion, garlic, vegetable broth, salt, pepper, and thyme.

Cooking

  • Cook on low for 7-8 hours or high for 4-5 hours until potatoes are tender.
  • Use a potato masher to mash some of the potatoes for a chunkier texture.
  • Stir in the heavy cream and cheese (if using) during the last 30 minutes of cooking.

Serving

  • Serve hot, garnished with chopped green onions.

Notes

Can be served with crusty bread or crackers. Pairs well with a salad. For a lighter version, substitute heavy cream with milk or a dairy-free alternative. Add cooked bacon or ham for extra flavor if desired.
