  • 1 lb ground beef You can brown in a skillet for richer flavor
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream Can be substituted with half-and-half or a dairy-free alternative
  • 1 teaspoon salt Adjust to taste
  • 1/2 teaspoon pepper Adjust to taste
  • 1 cup cheddar cheese, shredded
  • 1/4 cup green onions, sliced For garnish

Preparation

  • In a crockpot, add diced potatoes, ground beef, chopped onion, minced garlic, and beef broth.
  • Season with salt and pepper.

Cooking

  • Cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender.
  • Stir in heavy cream and shredded cheddar cheese, and let it warm through.

Serving

  • Top with sliced green onions before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for about 3-4 days. To reheat, warm on the stove or in the microwave. Add a splash of broth or water if the soup thickens.
