  • 1 pound boneless, skinless chicken breasts Can use frozen chicken breasts, increase cooking time slightly.
  • 4 cups sweet corn Fresh or frozen works.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced Sautéing the garlic elevates flavor.
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme

Toppings

  • to taste crispy bacon For topping.

  • to taste sour cream For topping.

Instructions
 

Preparation

  • Place chicken, corn, onion, garlic, chicken broth, salt, pepper, and thyme in the crockpot.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours.
  • Remove the chicken and shred it with two forks, then return it to the pot.
  • Stir in the heavy cream and cook for an additional 30 minutes.
  • Serve hot and top with crispy bacon, shredded cheese, or sour cream as desired.

Notes

Leftovers can be stored in the fridge for 3-4 days in an airtight container. Chowder can be frozen for up to 3 months.
