  • 2 lbs chicken breasts
  • 1 cup chicken broth
  • 1/2 cup butter melted
  • 2 tablespoons Cajun seasoning adjust to taste
  • 1 onion chopped onion
  • 4 cloves garlic minced
  • 1 cup heavy cream whipped for extra creaminess
  • Salt and pepper to taste
  • Cooked rice or crusty bread for serving

Instructions
 

Preparation

  • Place the chicken breasts in the crockpot.
  • In a separate bowl, mix together the chicken broth, melted butter, Cajun seasoning, chopped onion, and minced garlic.
  • Pour the mixture over the chicken in the crockpot.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
  • Once done, shred the chicken in the sauce and stir in the heavy cream.
  • Season with salt and pepper to taste.
  • Serve over rice or with crusty bread.

Notes

Store leftovers in the fridge for up to 3-4 days or freeze for 2-3 months. Reheat on the stove or microwave, adding broth if necessary to thin.
