Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup butter
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon garam masala
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 can (15 oz) tomato sauce
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Naan or rice, for serving

Instructions
 

Preparation

  • Place the chicken thighs in the crockpot.
  • In a bowl, mix together the butter, onion, garlic, ginger, garam masala, cumin, paprika, turmeric, and tomato sauce.
  • Pour the mixture over the chicken in the crockpot.

Cooking

  • Cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender.
  • Shred the chicken in the sauce and stir in the heavy cream.
  • Season with salt and pepper to taste.

Serving

  • Serve with naan or over rice, garnished with fresh cilantro.

Notes

Feel free to experiment with adding spinach or swapping chicken for paneer. For a vegan option, replace chicken with chickpeas or tofu and use coconut cream.
