  • 8 ounces pasta (e.g., penne or rotini) Cook according to package instructions.

For the Cajun chicken

  • 1 pound chicken breasts Use fresh or frozen.
  • 1 tablespoon Cajun seasoning Adjust to taste.
  • 1 cup heavy cream Can substitute for coconut milk for dairy-free version.
  • 1 cup chicken broth For added flavor.
  • 1 cup bell peppers (sliced) Any color bell pepper works well.
  • 1 cup onion (chopped) Yellow or white onion preferred.
  • 2 cloves garlic (minced) Toasted garlic enhances flavor.
  • 1 cup grated Parmesan cheese Can substitute with nutritional yeast for a vegan option.
  • Salt and pepper to taste Adjust seasoning as needed.
  • Chopped parsley for garnish For presentation.

Instructions
 

Preparation

  • Place the chicken breasts in the slow cooker and sprinkle with Cajun seasoning.
  • Add the heavy cream, chicken broth, bell peppers, onion, and minced garlic.

Cooking

  • Cover and cook on low for 6-7 hours or high for 3-4 hours.
  • About 30 minutes before serving, cook the pasta according to package instructions.
  • Once the chicken is cooked, shred it with two forks and stir in the cooked pasta and Parmesan cheese.
  • Mix well and season with salt and pepper to taste.

Serving

  • Serve hot, garnished with chopped parsley.

Notes

Easy to store leftovers for 3-4 days in the fridge. Freeze for 2-3 months.
