Ingredients
  

For the Chicken

  • 1 lb chicken breast, cut into bite-sized pieces Ensure pieces are uniform for even cooking.
  • 1/2 cup cornstarch For coating the chicken.
  • 1/4 cup sesame oil Heat for frying.
  • 1/3 cup soy sauce Base for sauce.
  • 2 tablespoons honey Adds sweetness to the sauce.
  • 2 cloves garlic, minced For flavoring.
  • 1 teaspoon ginger, minced For flavoring.
  • Sesame seeds for garnish Sprinkle on top before serving.

For the Fried Rice

  • 2 cups cooked rice Fluffy rice works best.
  • 1 cup mixed vegetables (carrots, peas, bell peppers) Use fresh or frozen.
  • 2 eggs beaten For scrambling.
  • 2 tablespoons green onions, chopped For garnish.

Preparation

  • Toss the chicken pieces in cornstarch until fully coated.
  • Heat sesame oil in a pan over medium heat.

Cooking the Chicken

  • Fry the chicken until golden brown and crispy, about 5-7 minutes.
  • In a bowl, mix soy sauce, honey, garlic, and ginger. Pour this over the chicken and stir to coat.

Fried Rice

  • In another pan, heat a bit of oil and add the mixed vegetables; sauté for 2-3 minutes.
  • Push the veggies to one side, pour the beaten eggs into the pan, and scramble.
  • Add the cooked rice and stir everything together.

Serving

  • Serve the crispy sesame chicken over the fried rice, garnished with sesame seeds and green onions.

Notes

For an extra kick, serve with a lime wedge or a sprinkle of extra green onions. Add hot sauce for those who like spice.
