Ingredients
  

Taco Filling

  • 1 can black beans, rinsed and drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt

Taco Assembly

  • 8 pieces corn tortillas
  • 1 cup shredded lettuce
  • 1 pieces avocado, sliced
  • Salsa for topping

Cooking Steps

  • Preheat your oven to 400°F (200°C), or heat a skillet over medium heat or an air fryer.
  • In a bowl, mash the black beans with cumin, chili powder, and a pinch of salt.
  • Take a corn tortilla, fill it with the black bean mixture, and fold it in half.
  • Place the tacos in the oven, skillet, or air fryer. Cook until crispy and golden, about 10 minutes, flipping halfway through.
  • Fill with shredded lettuce and sliced avocado before serving.
  • Top with salsa and enjoy!

Notes

For extra flavor, lightly toast the corn tortillas before filling them. These tacos can also be made vegan by opting for vegan-friendly salsa. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
