Creamy White Chicken Lasagna Soup

Ingredients
  

Main Ingredients

  • 2 cups cooked and shredded chicken Can use rotisserie chicken for convenience.
  • 6 pieces lasagna noodles, broken into pieces
  • 4 cups chicken broth Use low-sodium if preferred.
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced Don't skip this for flavor.
  • 1 small onion, diced
  • 2 cups spinach (optional) Add just before serving.
  • Salt and pepper to taste
  • Italian seasoning to taste

Instructions
 

Preparation

  • In a large pot, sauté the onion and garlic until soft.
  • Add in the shredded chicken and chicken broth, bringing it to a boil.
  • Stir in the broken lasagna noodles and cook until al dente.

Cooking

  • Reduce the heat and add the heavy cream, ricotta cheese, mozzarella cheese, and Parmesan cheese.
  • Stir until well combined and the cheese has melted.
  • Add salt, pepper, and Italian seasoning to taste.
  • If using spinach, stir it in just before serving.
  • Serve hot and enjoy!

Notes

For added flavor, serve with extra Parmesan on top and crusty bread. Can be stored in the fridge for 4-5 days or frozen for up to a month. Add a splash of broth if it thickens during storage.
