  • 1 cup heavy cream Can substitute with cashew cream or coconut milk.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Sauté until fragrant.
  • to taste Salt and pepper
  • to taste Parmesan cheese for serving (optional)

Instructions
 

Preparation

  • Cook gnocchi according to package instructions, then drain.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  • Add spinach and cook until wilted.
  • Pour in the heavy cream and bring to a simmer.
  • Stir in the feta cheese until melted and creamy.
  • Add the cooked gnocchi to the skillet and stir to combine. Season with salt and pepper to taste.
  • Serve warm, topped with Parmesan cheese if desired.

Notes

Leftovers can last in the fridge for up to three days. If freezing, note that texture may change. Reheat in a skillet or microwave.
