Preparation

  • In a skillet over medium heat, add olive oil and cook the chicken breasts until golden and cooked through. Remove from the skillet and set aside.
  • In the same skillet, add minced garlic and sauté until fragrant.
  • Pour in the chicken broth, scraping any browned bits from the bottom of the skillet.
  • Add the heavy cream, cheese, and dried herbs. Stir until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.
  • Return the chicken to the skillet and simmer for a few more minutes.
  • Serve over pasta or rice.

Notes

This dish keeps well in the fridge for up to 3 days or can be frozen for about a month. Reheat gently on the stove, adding a splash of broth or cream if it thickens too much. Experiment with cheese and add spinach or sun-dried tomatoes for variations.
