Ingredients
  

Chicken

  • 2 pieces chicken breasts, cut in half lengthwise

Seasoning

  • 1 tsp salt flakes
  • 1/4 tsp black pepper
  • 1 tsp sweet paprika
  • 1 tsp onion powder
  • 1 tsp dried thyme

Dredging and Cooking

  • 1/4 cup plain/all-purpose flour
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter plus another if necessary
  • 1 tbsp garlic, freshly minced

Creamy Sauce

  • 1/2 cup chicken stock
  • 300 ml thickened/heavy cream
  • 1 tsp Dijon mustard
  • 1/2 cup Parmesan cheese, grated

For Serving

  • 1 tbsp parsley, finely chopped for garnish
  • 1 pieces lemon wedges for serving
  • mashed potatoes, steamed rice or pasta for serving
  • steamed greens, such as broccoli or green beans for serving

Instructions
 

Preparation

  • Season the chicken schnitzels with salt, pepper, sweet paprika, onion powder, and dried thyme. Rub the spices into the chicken for even flavor distribution.
  • In a shallow dish, spread the flour. Dredge each seasoned chicken breast in the flour mixture, shaking off excess flour.

Cooking

  • In a large skillet, heat olive oil and unsalted butter over medium-high heat. Once hot, carefully add the chicken. Cook for about 5 minutes on each side until golden brown and fully cooked. Remove chicken from pan.
  • In the same skillet, add another tablespoon of butter if needed. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the chicken stock, bring to a simmer, and scrape the bottom of the pan to lift any browned bits.
  • Stir in thickened cream, Dijon mustard, and grated Parmesan cheese. Simmer gently while stirring. Season with additional salt and pepper to taste.
  • Return the chicken schnitzels to the skillet and simmer for a few more minutes to absorb the flavors.

Serving

  • Plate the schnitzels with preferred sides, add steamed greens, garnish with parsley, and serve with lemon wedges.

Notes

For a crispier coating, consider double dredging the chicken. Let the chicken marinate in spices for an hour for deeper flavor. Use cayenne pepper for a spicier twist.
