  • 2 pieces chicken breasts Use uniform size for even cooking
  • 2 tablespoons Cajun seasoning Customize to taste
  • 1 cup heavy cream Can substitute with coconut cream for dairy-free
  • 1/2 cup Parmesan cheese, grated Can substitute with another cheese like cheddar or feta
  • 2 cups cooked rice Use fluffy white rice
  • 1 tablespoon olive oil For cooking the chicken
  • to taste Salt and pepper
  • to taste Green onions for garnish (optional) For added crunch and color

Instructions
 

Preparation

  • Season chicken breasts with Cajun seasoning to give them that perfect kick.
  • In a skillet, heat olive oil over medium heat and cook the chicken until fully cooked, about 6-7 minutes per side.
  • Remove chicken from the skillet and let it rest before slicing it up.

Cooking

  • In the same skillet, add heavy cream and Parmesan cheese, stirring until fully combined and creamy.
  • Serve the sliced chicken over the cooked rice and drizzle with the creamy sauce.
  • Garnish with green onions if desired.

Notes

Leftovers can be stored in the fridge for about 3-4 days. For freezing, store in an airtight container for about 2-3 months. Reheat on the stove for best results. Feel free to substitute chicken with shrimp or tofu for a different protein.
