  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated Can be substituted with other cheese if desired
  • 2 cups cooked rice Use white or brown rice
  • 1 tablespoon olive oil For cooking the chicken
  • to taste Salt and pepper
  • as needed Green onions for garnish Optional but recommended for presentation

Instructions
 

Preparation

  • Season chicken breasts with Cajun seasoning.
  • In a skillet, heat olive oil over medium heat.
  • Cook the chicken until fully cooked, about 6-7 minutes per side.
  • Remove chicken from the skillet and let it rest before slicing.

Sauce Preparation

  • In the same skillet, add heavy cream and Parmesan cheese, stirring until combined and creamy.
  • Serve the sliced chicken over the cooked rice, drizzling with the creamy sauce.
  • Garnish with green onions if desired.

Notes

For a spicier dish, add more Cajun seasoning. Leftovers can be stored in the fridge for 3-4 days or frozen for 2-3 months. If short on time, rotisserie chicken can be used.
