  • 1/2 cup cranberry sauce
  • 2 tablespoons olive oil

Preparation

  • Preheat your oven to 375°F (190°C).
  • Carefully slice a pocket into each chicken breast.
  • Stuff each pocket with a slice of brie cheese and a spoonful of cranberry sauce.
  • Season the outside of the chicken breasts with salt and pepper.

Cooking

  • Heat olive oil in a skillet over medium-high heat, and sear the chicken breasts for 2-3 minutes per side until golden brown.
  • Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes or until the chicken is fully cooked.
  • Garnish with fresh thyme or parsley before serving.

Notes

For best results, don't rush the searing step; it seals in the juices and enhances the flavor. Leftovers can be stored in the fridge for about 3-4 days in an airtight container.
