Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix cranberry sauce and balsamic vinegar to create the glaze.
  • Season the chicken thighs with salt and pepper.

Cooking

  • Heat olive oil in an oven-safe skillet over medium-high heat.
  • Sear the chicken thighs for 4-5 minutes on each side until browned.
  • Pour the cranberry balsamic glaze over the chicken.
  • Transfer the skillet to the oven and bake for 25-30 minutes, until cooked through.

Notes

For juicy chicken, do not overcook! Use a meat thermometer to check for 165°F. You can use a mix of fresh cranberries and a bit of sugar if cranberry sauce is not available. Pat the chicken dry before seasoning for extra crispy skin.
