Cowboy Cookies

Ingredients
  

Cookie Base

  • 1 cup butter, softened 2 sticks
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt

Add-ins

  • 2 cups old-fashioned rolled oats
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped pecans

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Cream the butter and sugars together for 2-3 minutes until light and fluffy. Scrape down the bowl.
  • Add the eggs one at a time, beating well after each addition, and mix in the vanilla.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add this to the wet ingredients, mixing until just combined.
  • Fold in the oats, chocolate chips, and pecans.
  • Drop tablespoonfuls of dough onto the prepared sheets, spacing about 2 inches apart.

Baking

  • Bake for 10-12 minutes, or until the edges are golden and the centers look slightly underdone.
  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chill your dough for 30 minutes before baking for thicker cookies. You can substitute pecans with walnuts or almonds. Dried fruit can be mixed in for extra flavor.
