Ingredients
  

Main Ingredients

  • 1 cup cottage cheese
  • 1/4 cup cocoa powder
  • 1/4 cup almond flour
  • 1/4 cup sweetener (like erythritol or stevia) Can substitute with regular sugar
  • 2 pieces eggs For a vegan version, use flax eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 pinch salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a small baking dish.
  • In a bowl, blend the cottage cheese until smooth.
  • Add the cocoa powder, almond flour, sweetener, eggs, vanilla extract, baking powder, and salt. Mix until well combined.
  • Pour the mixture into the prepared baking dish.

Baking

  • Bake for about 20-25 minutes, until the edges are set but the center remains soft.
  • Let cool slightly, then serve warm for that ooey-gooey lava effect.

Notes

Serve warm with whipped cream or fresh berries. Store leftovers in the fridge for up to 3 days or freeze for up to a month. Reheat in the microwave for a quick dessert fix.
