  • 1.5 lbs boneless, skinless chicken breasts About 3 chicken breasts
  • 1 cup low-fat cottage cheese
  • 1 cup chopped celery
  • 0.5 cup finely diced red onion
  • 2 tbsp Dijon mustard
  • 2 tbsp fresh herbs (dill or parsley) Use your favorite fresh herb

Preparation

  • Preheat your oven to 375°F (190°C).
  • Season the chicken breasts with salt and pepper, then place them on a parchment-lined baking sheet.
  • Bake for 25-30 minutes until fully cooked.
  • Let the chicken cool for 5 minutes.
  • Chop the celery and finely dice the red onion while you wait.
  • Shred the cooled chicken into bite-sized pieces.
  • In a large mixing bowl, combine shredded chicken, cottage cheese, celery, onion, Dijon mustard, and fresh herbs.
  • Stir until everything is well-coated, then taste and adjust seasoning as needed.

Notes

This salad is fantastic on its own but can also be served on crisp lettuce leaves or stuffed into a whole grain wrap for added crunch. Store leftovers in an airtight container for about 3-4 days. For meal preppers, this dish is ideal as flavors improve over time.
