  • 1 pound boneless, skinless chicken breasts
  • 1 cup cottage cheese get the good stuff!
  • 1 cup marinara sauce store-bought or homemade
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper to taste
  • tablespoon Olive oil for cooking
  • Fresh basil for garnish (optional)

Instructions
 

Cooking the Chicken

  • Heat a drizzle of olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt and pepper.
  • Cook the chicken in the skillet until golden brown and cooked through, about 6-7 minutes per side.

Assembling the Bowl

  • Spread the marinara sauce over the chicken.
  • Scoop dollops of cottage cheese on top.
  • Sprinkle the mozzarella cheese generously over everything.
  • Cover the skillet and let it cook for an additional 5-10 minutes until the cheese is melty and bubbly.

Serving

  • Garnish with fresh basil before serving.

Notes

This dish keeps well in the fridge for about 3-4 days in an airtight container. It can also be frozen for up to a month. To reheat, add a splash of broth or water to keep it creamy.
