  • 1 lb chicken breasts, diced
  • 1 cup cottage cheese
  • 1.5 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon olive oil
  • to taste Salt and pepper
  • Fresh basil (for garnish)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the diced chicken breast to the skillet. Season with salt, pepper, and dried oregano. Cook until the chicken is browned and cooked through (about 5-7 minutes).
  • Stir in the marinara sauce and bring to a simmer. Let it bubble for a couple of minutes.
  • Turn off the heat and mix in the cottage cheese until well combined.
  • Top with shredded mozzarella and sprinkle with grated Parmesan.

Baking

  • Transfer the skillet to the oven and bake for 15-20 minutes, or until the cheese is bubbly and golden.

Garnishing

  • Remove from the oven and garnish with fresh basil before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze individual portions for up to 3 months. When ready to eat, thaw in the fridge overnight and reheat in the oven.
