Ingredients
  

Soup Base Ingredients

  • 2 tablespoons olive oil For sautéing
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, chopped
  • 2 stalks celery, chopped
  • 4 cups vegetable broth
  • 2 cups potatoes, diced
  • 1 cup green beans, chopped Can substitute with peas or zucchini
  • 1 cup heavy cream or coconut milk Use coconut milk for a vegan option
  • Salt and pepper to taste
  • Fresh herbs (like thyme and parsley), for garnish

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the diced onion and garlic, cooking until softened.
  • Stir in the carrots and celery, and cook for about 5 minutes.
  • Add the vegetable broth and bring to a boil.

Cooking

  • Stir in the potatoes and green beans, then reduce heat and simmer until veggies are tender, about 15-20 minutes.
  • Stir in the heavy cream and season with salt and pepper.

Serving

  • Serve hot, garnished with fresh herbs and with delicious bread on the side.

Notes

For a thicker texture, blend part of the soup. Add red pepper flakes for heat. Can freeze for up to 3 months.
