  • 4 cups chicken broth Ensure gluten-free if needed
  • 2 large potatoes, diced Cut larger for a heartier soup if desired
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 small onion, diced Sauté until translucent
  • 2 cloves garlic, minced Sauté for flavor enhancement
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional) Thyme or rosemary recommended

Preparation

  • In a large pot, sauté diced onion and minced garlic over medium heat until they’re translucent.
  • Add the chicken breasts, chicken broth, diced potatoes, sliced carrots, and chopped celery.
  • Season with salt and pepper, then bring to a gentle boil.
  • Once boiling, reduce heat and let it simmer for about 20 minutes or until the chicken is cooked through.
  • Remove the chicken, shred it, and throw it back in the pot.
  • Taste and adjust seasoning if needed.
  • Serve hot, garnished with fresh herbs if you want to impress!

Notes

For a creamy version, stir in a splash of cream or coconut milk at the end. You can store leftovers in the fridge for about 3-4 days or freeze for up to 3 months.
