Main Ingredients

  • 1 pound chicken breast Boneless, skinless
  • 4 cups chicken broth
  • 2 cups egg noodles Can substitute with your choice of noodles

Aromatics and Seasonings

  • 1 tablespoon fresh ginger, grated Adds flavor and warmth
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • Salt and pepper to taste
  • Chopped green onions for garnish

Preparation

  • In a large pot, heat some oil over medium heat.
  • Add the onion, carrots, and celery. Sauté until they’re softened.
  • Toss in the garlic and ginger, and cook for another minute until fragrant.
  • Add the chicken and broth, bringing it to a boil.
  • Reduce the heat and let it simmer until the chicken is cooked through.
  • Remove the chicken, shred it, and add it back to the pot.
  • Stir in the egg noodles and cook until tender.
  • Season with salt and pepper to taste. Garnish with chopped green onions before serving.

Notes

The soup lasts up to 3-5 days in the fridge and can be frozen for up to 2-3 months. Reheat with added broth or water if needed. For a creamier version, add a splash of coconut milk or heavy cream.
