Ingredients
  

For the Filling

  • 15 oz ricotta cheese Use full-fat ricotta for best flavor.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract Pure vanilla extract is recommended.
  • 1/2 cup mini chocolate chips Regular chocolate chips can be used, chopped smaller.

For the Crust

  • 1 package puff pastry Keep puff pastry cold before use.
  • 1 egg for egg wash

Optional

  • confectioners' sugar For dusting before serving.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Roll out the puff pastry and fit it into a greased baking dish.
  • In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract until smooth.
  • Fold in the mini chocolate chips.
  • Spread the ricotta mixture evenly over the puff pastry crust.
  • Roll out another sheet of puff pastry and place it over the filling. Seal the edges.
  • Brush the top with beaten egg for that golden finish.

Baking

  • Bake for 25-30 minutes or until the top is golden brown.
  • Allow to cool, then cut into squares.
  • Optionally, dust with confectioners' sugar before serving.

Notes

These squares keep well in the fridge for up to 3 days. For longer storage, freeze in a freezer-safe container for up to a month.
