Ingredients
  

Pastry Base

  • 1 package puff pastry Use cold for better puffing.
  • 1 egg for egg wash Beaten for a golden finish.

Filling

  • 15 oz ricotta cheese Mascarpone can be used for a richer flavor.
  • 1 cup powdered sugar Adjust sweetness to taste.
  • 1 teaspoon vanilla extract Adds flavor.
  • 1/2 cup mini chocolate chips Regular chocolate chips can be used, chopped smaller.

Optional Topping

  • to taste confectioners sugar For dusting before serving.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Roll out the puff pastry and fit it into a greased baking dish.
  • In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract until smooth.
  • Fold in the mini chocolate chips.
  • Spread the ricotta mixture evenly over the puff pastry crust.
  • Roll out another sheet of puff pastry and place it over the filling. Seal the edges.
  • Brush the top with beaten egg for a golden finish.

Baking

  • Bake for 25-30 minutes or until the top is golden brown.
  • Allow to cool, then cut into squares.
  • Dust with confectioners sugar before serving, if desired.

Notes

These squares keep well in the fridge for up to 3 days. Store in an airtight container. Can be made a day in advance and frozen for up to a month.
