Ingredients
  

For the Cinnamon Filling

  • 4 tablespoons unsalted butter, softened
  • cup brown sugar, packed
  • tablespoons all-purpose flour
  • teaspoons ground cinnamon
  • Pinch of salt

For the Cookie Dough

  • 1 cup unsalted butter, softened but still cool to the touch
  • 1 ⅓ cups granulated sugar
  • 1 ¾ teaspoons pure vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 ¾ cups all-purpose flour
  • ¾ teaspoon baking powder
  • 1 teaspoon cornstarch
  • ¼ teaspoon salt

Preparation

  • Preheat the Oven: Get your oven to 350°F and line two baking sheets with parchment paper.
  • Make the Cinnamon Filling: In a small bowl, mix together softened butter, brown sugar, flour, cinnamon, and salt. Freeze this mixture for about 10 minutes while you whip up the cookie dough.

Mixing

  • Cream the Butter and Sugar: Using a hand or stand mixer, beat together the cool butter and granulated sugar until it’s light and creamy. Add vanilla, the whole egg, and egg yolk, mixing until smooth.
  • Mix Dry Ingredients: In another bowl, whisk together flour, baking powder, cornstarch, and salt. Gradually incorporate these dry ingredients into the wet mix, avoiding overmixing to keep your cookies tender.

Combining

  • Layer the Dough: Remove half of the cookie dough to set aside. Spread the remaining half evenly in the bowl. Take the chilled filling and spread small pieces over this layer. Top with the reserved dough, then sprinkle more cinnamon sugar on top.
  • Fold and Form: Gently fold the dough and filling together a couple of times, then scoop out dough balls (about 2 tablespoons each). Freeze them for 10 minutes to firm up.

Baking

  • Bake: Space your chilled dough balls on the baking sheets and bake for 10-12 minutes until the edges are golden and the centers are slightly underdone.
  • Cool: Transfer cookies to wire racks and let them cool completely. They’ll firm up beautifully!

Notes

Chill your dough balls before baking to prevent excessive spreading. For a healthier version, you can use coconut sugar instead of brown sugar. Feel free to add nutmeg or ginger for a spice kick!
