Ingredients
  

Main Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract

For the Filling

  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
  • In another bowl, cream the softened butter with the granulated and brown sugars until fluffy.
  • Beat in the egg and vanilla extract until smooth.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Prepare the filling by combining the brown sugar and cinnamon in a small bowl.
  • Spread half of the dough on parchment paper, sprinkle with the cinnamon filling, and roll it up tightly.
  • Slice into rounds and place on a baking sheet lined with parchment paper.

Baking

  • Bake for 10-12 minutes or until golden-brown.

Notes

Serve warm and dust with powdered sugar or drizzle with icing. Store in an airtight container for up to a week in the fridge and three months in the freezer. Reheat in the microwave for a few seconds before serving.
